Acidity is the key element of wine without it there is no point. acid tells your brain your hunger, hense high acid wines are always served by restaurants before dinner, sweet tells your brain your full, thats the reason they give you a piece of candy on the way out the door, they don't want you leaving feeling hunger. . Ever wonder why you feel so full half way thru dinner at a Chineese restaurant? It's the sweet and sour sauce, half hour later your hungrey again.
Riesling is the King of white grapes, for those of us lucky enough to be in the wine business, it's the white wine . Drink a dry riesling from Alsace with fresh diver scallops or a Mosel with a classic pork dish. Its all about the acid and nothing else. cheers
