I live in Gascony and have to point out that there is absoloutely no Cognac produced here. The region is however famous for its Armagnac which as an appelation follows strict geographical /production rules. Three geographical zones then  deliminates the sub appelations, each with a distinct flavour profile due to the terroir. 
 It however is in all cases a once distilled eau de vie that has to be aged in oakvats - the very best are single domain varieties, however the majority available abroad/ outside of specialist retailers stocks are blended products, quality generally following the price. Cognac in contrast is a twice destilled product, the composition and origin of which follow les strict rules. 

To each their own, but it is not just a coinsidence or a patriotic(gascyotic) claim that gourmets treasure armagnac above cognac for its subtle and complex flavours. Around here there is no doubt that the 100years war was all about getting control of the armagnac production.
